As Italian I am prohibited to use Ketchup, it is against our National Rules :P

Anyway, for Acidity you can add a very small amount of sugar. It is a custom in Italy. If your tomato is too acid you can correct it with a bit of sugar but you must be very careful. Too much, it sucks and you ruin your pasta.

This reminds me that there is also a very deep discussion about the type of Pasta. I.E: You use Spaghetti only for certain sauces.
